Wonderfully floral, mineral and elegant, this is our top pick for Chablis this summer. Samuel Billaud stepped away from his winemaking familt to found his own winery in 2009, using a blend of old school techniques and modern winemaking equipment. Vines are 35-year-old and both stainless steel and used oak are used for fermentation and aging. Malolactic fermentation adds a creamy texture to this crisp white wine. Pair with scallops, oysters or roast chicken.
